Barbecued octopus skewers

Grill up simple, succulent octopus skewers.
Ingredients:
  • 8 (about 650g) baby octopus, cleaned, halved
  • 2 garlic cloves, crushed
  • 36.40 gm olive oil
  • 40.00 ml chopped oregano
  • 16 fresh bay leaves
  • Olive oil spray
Instructions:
  • In a bowl, mix together octopus, garlic, oil, and half of the oregano. Cover and refrigerate for 2 hours to enhance flavors.
  • Start by heating up a lightly greased barbecue or char-grill plate on high heat. Then, carefully thread the octopus and bay leaves onto the skewers. Season with salt and pepper, then give them a quick spray with olive oil. Cook on the barbecue, turning them occasionally, for about 4 minutes until they are tender. Serve by sprinkling with the remaining oregano and providing lemon wedges on the side, if desired.
