Flavorful Arctic char with rosemary, garlic, lime, cayenne, and sherry, baked to perfection.
Ingredients:
  • 1 (10 ounce) fillet arctic char, rinsed and patted dry
  • sea salt to taste
  • 1 lime, zested and juiced
  • 0.25 cup olive oil
  • 0.25 cup sherry wine
  • 3 sprigs rosemary, leaves stripped
  • 2 cloves garlic
  • 0.25 teaspoon cayenne pepper, or to taste
  • ground black pepper to taste
Instructions:
  • Prepare all your ingredients.
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and elegantly line a baking dish with aluminum foil.
  • Season the arctic char with exquisite sea salt, lay it gently in the prepared baking dish, and generously sprinkle with fresh lime zest.
  • In a food processor, blend lime juice, olive oil, sherry, rosemary, and garlic until garlic is finely chopped.
  • Coat fish with mixture and season generously with cayenne pepper and black pepper.
  • Place the fish in the preheated oven and bake for 12 to 15 minutes, basting with pan juices midway. When the fish is almost fully cooked, switch the oven to broil and cook for an additional 2 minutes until the top is nicely browned.
