Old School Mac n' Cheese

Cheesy macaroni baked with American and Cheddar cheese, topped with crunchy potato chip and more cheese.
Ingredients:
  • 1.75 pounds whole-wheat macaroni
  • 0.75 cup butter
  • 0.75 cup all-purpose flour
  • 6 cups milk, divided
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon mustard powder
  • 1 teaspoon onion powder
  • 1 teaspoon cayenne pepper
  • salt and ground black pepper to taste
  • 1 (8 ounce) package shredded Cheddar cheese, divided
  • 3 (8 ounce) packages shredded American cheese
  • 1 (8 ounce) bag potato chips (such as Lay's®), crushed
  • 1 cup shredded Cheddar cheese
  • 0.33333334326744 cup grated Parmesan cheese
  • butter-flavored cooking spray
Instructions:
  • Preheat your oven to 375°F (190°C) for perfect baking results.
  • Bring a large pot of salted water to a boil. Cook elbow macaroni until al dente, about 8 minutes, then drain.
  • In a large pot over medium-low heat, melt butter. Gradually whisk in flour and cook until browned and fragrant, about 5 minutes. Slowly pour 1 cup milk into the mixture while whisking continuously for about 45 seconds; repeat twice. Whisk in the remaining 3 cups of milk. Stir in Worcestershire sauce, mustard powder, onion powder, and cayenne pepper. Season with salt and black pepper.
  • Lower the heat and simmer the sauce, whisking occasionally, until it thickens, approximately 10 minutes. Gradually add half the package of shredded Cheddar cheese while stirring constantly until melted. Repeat the same process with the rest of the Cheddar cheese and the American cheese, adding about 4 ounces of each at a time. Once all the cheese is fully melted into the sauce, remove it from the heat.
  • Gently mix the drained macaroni into the creamy cheese sauce until evenly coated. Transfer the macaroni mixture into two 9x13-inch baking dishes, ready to be baked to perfection.
  • Combine crushed potato chips, 1 cup shredded Cheddar cheese, and Parmesan cheese in a bowl. Spread the mixture evenly over the macaroni. Lightly coat the topping with cooking spray.
  • Bake until the crust is a beautiful golden brown and the sauce is bubbling, for 35 to 45 minutes in a preheated oven.
