Indulge in a luscious blueberry custard pie with fresh berries and a flaky crust, perfect for summer treat.
Ingredients:
  • 2 (9 inch) prepared pie crusts
  • 3 eggs, slightly beaten
  • 1.75 cups white sugar
  • 4 tablespoons all-purpose flour
  • 3 tablespoons cornstarch
  • 2 tablespoons milk
  • 3 cups fresh blueberries
Instructions:
  • Preheat your oven to a toasty 410 degrees F (210 degrees C), then snugly tuck a single pie crust into a pie plate.
  • In a spacious bowl, gently beat the eggs. Stir in sugar, flour, cornstarch, milk, nutmeg, cinnamon, and salt. Mix in blueberries until evenly combined. Spread the blueberry mixture over the bottom crust.
  • Roll the top crust into a 10-inch circle. Cut into 1/2-inch strips with a sharp knife. Moisten the rim of the pie with a little water. Lay the longest 2 strips in an X in the center. Weave alternate horizontal and vertical strips in an over-and-under pattern. Use the shorter strips for the edges. Tuck the ends under the bottom crust and flute the edges.
  • Bake in the preheated oven for about 50 minutes, or until the center is set.
