Whip up a festive peppermint hard candy with sugar, corn syrup, and peppermint extract. Customize with red or green coloring for a nostalgic holiday treat.
Ingredients:
  • 2 cups white sugar
  • 1 cup water
  • 0.75 cup light corn syrup
  • 0.5 teaspoon peppermint extract
  • 1 drop red food coloring
  • 0.125 cup confectioners' sugar
Instructions:
  • Prepare two 9-inch pans and one baking sheet by giving them a generous coating of grease.
  • In a heavy 2 quart saucepan, mix sugar, water, and corn syrup. Stir constantly until the sugar dissolves. Stop stirring and reduce heat gradually until it reaches the hard crack stage (300 degrees F). Remove any sugar crystals that form on the sides of the pan with a damp brush.
  • Take the mixture off the heat, stir in oil and food coloring until well combined. Pour into greased 9-inch pans. Place one pan over hot water, cut when ready. Once the other pan cools slightly, cut into 1-inch strips with scissors and then into pieces quickly. Drop the pieces onto a buttered baking sheet. If the candy hardens too fast, soften over hot water. Keep it moving to avoid stickiness.
  • Add a sprinkle of powdered sugar to prevent sticking, then do the same for the second pan of candy.
