Vintage family breakfast favorite: a bowl of this timeless classic served with milk.
Ingredients:
  • 1 cup yellow cornmeal
  • 2 tablespoons whole wheat flour
  • 1 tablespoon white sugar
  • 1 teaspoon baking powder
  • 1.5 tablespoons shortening, melted
  • 1 cup boiling milk
  • 1 egg, separated
Instructions:
  • Preheat your oven to 275 degrees F (135 degrees C) and lightly grease a 9x9 inch baking pan.
  • Combine the cornmeal and flour by sifting them together, then spread the mixture thinly on a baking sheet. Bake in a preheated oven until lightly browned, approximately 10 minutes. Allow it to cool before increasing the oven temperature to 400°F (200°C).
  • Combine the cornmeal mixture with salt, sugar, and baking powder in a large bowl. Add the shortening and milk, then stir everything together until well blended.
  • Beat egg white until stiff in a separate large bowl. In another bowl, beat egg yolk, then fold into the egg white. Gently stir in the flour mixture and pour into the prepared baking pan.
  • Achieve golden perfection by baking in a preheated oven for 45 to 50 minutes.
