Old-Fashioned Porridge and Molasses Bread

Molasses-infused oat bread: freezer-friendly and irresistibly tasty!
Ingredients:
  • 3 cups boiling water
  • 2 cups rolled oats
  • 0.25 cup shortening
  • 2 teaspoons white sugar
  • 1 cup warm water (100 degrees F (38 degrees C))
  • 2 (.25 ounce) packages active dry yeast
  • 0.66666668653488 cup molasses
  • 4 teaspoons salt
  • 8.5 cups all-purpose flour, or as needed
Instructions:
  • Pour boiling water over oats and shortening in a bowl. Stir until shortening melts; then let it sit for 20 minutes, occasionally giving it a gentle stir.
  • In lukewarm water, dissolve sugar completely. Add yeast and allow to stand for 10 minutes. Vigorously stir the mixture with a fork.
  • Mix the yeast mixture into the slightly cooled oat mixture along with molasses and salt. Allow it to cool to lukewarm for 5 to 10 minutes. Gradually incorporate 2 1/2 cups of flour, adding the rest as necessary.
  • Transfer the dough to a floured surface and knead it for 8 to 10 minutes until smooth. Form it into a ball, then place it in a greased bowl, making sure to coat the top with grease. Cover and let it rise until it doubles in size, approximately 1 1/2 hours.
  • Deflate dough and form into 4 loaves. Transfer to greased 8 1/2x4 1/2-inch bread pans. Cover and allow to rise until doubled in size, approximately 1 hour.
  • Preheat your oven to 400°F (200°C) for the perfect cooking temperature.
  • Bake until the tops are golden brown, around 30-35 minutes in a preheated oven.
