Country-style scalloped corn casserole with buttery saltine cracker topping, baked to golden perfection.
Ingredients:
  • 3 (15 ounce) cans cream-style corn
  • 1 cup crushed saltine crackers, divided
  • 0.5 cup butter, melted, divided
  • 2 large eggs
  • 0.5 teaspoon paprika
  • 0.25 teaspoon ground black pepper
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously butter an 8x11x2-inch casserole dish.
  • In a large bowl, mix together creamed corn, 1/2 cup cracker crumbs, 1/4 cup melted butter, and eggs until well combined. Transfer the mixture into the prepared dish.
  • In a small bowl, combine the remaining 1/2 cup cracker crumbs, remaining 1/4 cup melted butter, paprika, and pepper. Sprinkle the crumb topping over the casserole.
  • Bake in the oven until the topping turns golden and the filling bubbles around the edges, for about 30 to 40 minutes.
