Whip up a nostalgic treat with this airy and light Sea Foam candy recipe.
Ingredients:
  • 1 pound white sugar
  • 0.5 pint water
  • 4 tablespoons distilled white vinegar
  • 3 tablespoons light corn syrup
  • 0.5 teaspoon baking soda
  • 12 ounces semi-sweet chocolate chips
  • 2 tablespoons shortening
  • 1 (1 ounce) square unsweetened chocolate
Instructions:
  • Grease an 8-inch square baking pan with butter or oil and set it aside.
  • Combine sugar, water, vinegar, and syrup in a 4-quart heavy saucepan (preferably cast iron). Heat gently while stirring with a wooden spoon until sugar dissolves and syrup melts. Bring to a boil, cover, and boil for 3 minutes. Uncover and continue boiling until mixture reaches 285 degrees F (140 degrees C) on a candy thermometer. Remove from heat and stir in baking soda, ensuring bubbles subside slightly.
  • Pour the hot mixture into the prepared pan and let it sit until it just starts to set. Using a lightly oiled knife, score it into squares. Allow it to fully set, then cut or break it into pieces.
  • In a 2-quart glass bowl, melt chocolate chips, shortening, and baking chocolate in the microwave on high for about 2 minutes. Stir with a wooden spoon. Dip candy pieces into the melted chocolate, ensuring they are completely covered. Allow them to cool on waxed paper.
  • Individually wrap each candy in waxed paper and twist the ends. Keep them fresh in an airtight container.
