Ingredients:
  • 330g (1 1/2 cups) white sugar
  • 125mls (1/2 cup) water
  • 1 tsp white vinegar
  • 1.25 gm cream of tartar
  • Sparkling cachous (or hundreds and thousands), to decorate
Instructions:
  • In a small saucepan, blend together sugar, water, vinegar, and cream of tartar. Heat over medium heat, stirring constantly until the sugar completely dissolves.
  • Cook the mixture over high heat without stirring for 10-15 minutes or until it turns a pale golden brown. Periodically use a wet pastry brush to brush down the sides of the saucepan to prevent sugar crystals from forming.
  • Take the saucepan off the heat and let it rest for 1-2 minutes until the bubbles settle.
  • Pour the toffee mixture into a heat-resistant glass or ceramic jug, then carefully fill each of the 20 small patty cases halfway. Sprinkle with sparkling cachous or hundreds and thousands, then let them set for 15-20 minutes.
  • Store in a sealed container at room temperature for freshness for up to 1 week.
