Dutch New Year's fritters, Olie Bollen, are flavorful doughnut-style treats, perfect for snacking or breakfast.
Ingredients:
  • 2 (.25 ounce) packages active dry yeast
  • 0.5 cup lukewarm water (110 degrees F to 115 degrees F)
  • 4.5 cups all-purpose flour
  • 0.25 cup white sugar
  • 1 teaspoon salt
  • 2 eggs, beaten
  • 1.5 cups chopped apple
  • 1 cup raisins
  • 1 quart vegetable oil for frying
  • white sugar for decoration
Instructions:
  • Preheat the oven to the minimum temperature setting.
  • Combine yeast and warm water in a small mixing bowl; let it sit.
  • In a large mixing bowl, mix flour, sugar, and salt. Add eggs, yeast mixture, and milk, then beat with an electric mixer until smooth. Cover the dough with greased plastic wrap.
  • Turn off the oven and let it cool slightly. Place the bowl on the lowest rack of the warm oven and let the dough rest and rise for 1 hour.
  • Warm up the oil in a sturdy deep skillet until it reaches 350 degrees F (175 degrees C).
  • Take out the bowl from the oven, combine apples and raisins into the dough, and drop heaping teaspoons of the mixture carefully into the hot oil, ensuring not to overcrowd the skillet.
  • Fry fritters in hot oil until golden brown on each side, about 2 minutes per side. They will naturally flip over when ready, but keep an eye on them and flip as needed. Transfer to a paper towel-lined plate and repeat with remaining dough. Sprinkle with sugar while fritters are still warm.
