Oliebollen (Dutch Doughnuts)

Dutch Olliebollen: Deep-fried apple and raisin doughnuts, a delightful New Year's tradition.
Ingredients:
  • 1 (0.6 ounce) cake compressed fresh yeast
  • 1 cup lukewarm milk
  • 2.25 cups all-purpose flour
  • 2 teaspoons salt
  • 0.75 cup dried currants
  • 0.75 cup raisins
  • 1 medium Granny Smith apple - peeled, cored and finely chopped
  • 1 quart vegetable oil for deep-frying
  • 1 cup confectioners' sugar for dusting
Instructions:
  • Crumble compressed yeast and mix it into warm milk. Allow it to sit for a few minutes to dissolve.
  • In a large bowl, combine sifted flour and salt. Mix in the yeast mixture and egg until a smooth dough forms. Add currants, raisins, and apple, stirring well. Cover the bowl and let it rise in a warm place until doubled in volume, approximately 1 hour.
  • Preheat oil in a deep-fryer to 375°F (190°C) until hot and shimmering.
  • Shape 12 dough balls using two metal spoons. Carefully place them in the hot oil and fry until golden brown, about 8 minutes. Remove the doughnuts using a slotted spoon and let them drain on paper towels.
  • Sprinkle doughnuts with confectioners' sugar and place on a serving platter. Dust with additional confectioners' sugar for extra sweetness.
