Whip up fluffy and moist lemon cupcakes in a flash with this easy one-bowl recipe!
Ingredients:
  • 2.125 cups all-purpose flour
  • 2 cups white sugar
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup milk
  • 0.5 cup vegetable oil
  • 1 teaspoon lemon extract
  • 1 cup strained fresh lemon juice
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare 24 muffin cups by lining them with paper liners.
  • In a large mixing bowl, mix together flour, sugar, baking powder, baking soda, and salt. Using an electric mixer set to medium, beat in milk, eggs, vegetable oil, vanilla extract, and lemon extract for 2 minutes until well combined.
  • In a small saucepan, quickly bring lemon juice to a boil then gently incorporate it into the batter using an electric mixer on low speed.
  • Fill cupcake liners generously with batter, leaving space at the top for the cupcakes to rise.
  • Bake in the preheated oven for 15 to 17 minutes or until a toothpick inserted into the center comes out clean. Allow to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
