Whip up this simple spinach-mushroom pasta in one pot for a versatile meal that complements any protein like chicken, pork chops, steak, or fish.
Ingredients:
  • 1 Tablespoon olive oil
  • 1 medium yellow onion, sliced
  • 8 ounces white mushrooms, sliced
  • 2 cloves garlic, minced
  • 1/4 teaspoon crushed red chile flakes
  • 1 teaspoon kosher salt
  • 4 cups chicken broth
  • 8 ounces Rotini pasta
  • 1 (5 ounce) bag baby spinach
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon lemon juice
Instructions:
  • In a large skillet over medium-high heat, heat oil. Add onion and mushrooms and cook for 7 minutes. Then, add garlic and crushed chile flakes and cook for an additional 1 minute.
  • Combine salt, broth, and pasta in a pot. Bring to a boil, then simmer covered for 10 minutes, stirring halfway through.
  • Remove the pan from the heat. Add fresh spinach, cover, and allow to wilt for 2 minutes. Fold in grated Parmesan cheese and a splash of refreshing lemon juice. Serve right away to enjoy the flavors at their peak.
