One-Pot Spinach, Tomato, and Ricotta Pasta

Whip up a simple and delicious one-pot ricotta pasta with fresh tomatoes, spinach, and garlic.
Ingredients:
  • 1 (14.5 ounce) can fire-roasted diced tomatoes
  • 1 (10 ounce) package frozen chopped spinach
  • 1.5 cups vegetable broth
  • 1 cup water
  • 1.5 teaspoons garlic powder
  • 1 (8 ounce) package penne pasta
  • 8 ounces ricotta cheese
  • salt and ground black pepper to taste
  • 2 tablespoons grated Parmesan cheese, or to taste
Instructions:
  • In a large pot or Dutch oven, bring together tomatoes, spinach, broth, water, and garlic. Simmer covered until the broth starts bubbling, approximately 5 minutes.
  • Add the pasta and stir until it softens and is submerged. Cook while stirring until the pasta is tender and has absorbed most of the liquid, approximately 10 minutes.
  • Mix in creamy ricotta cheese and season generously with salt and pepper. Heat until the ricotta is warm. Sprinkle with savory Parmesan cheese just before serving.
