Easy one-pan butter chicken served with baby broccoli and basmati rice.
Ingredients:
  • 6 large Australian Chicken Thigh Fillets, thickly sliced
  • 485g jar butter chicken simmer sauce
  • 2 bunches baby broccoli, cut into 5cm lengths
  • 2 x 250g pkts Brown Basmati microwavable rice
  • 25g almond
Instructions:
  • Heat a large non-stick frying pan over high heat. Cook chicken in two batches, turning occasionally, for 5 minutes or until golden brown. Transfer to a plate between batches.
  • Lower the heat to medium and mix the chicken with the simmer sauce in the pan. Bring it to a simmer. Cook for 5 mins, turning occasionally, until the chicken is fully cooked. Add the baby broccoli on top, cover, and cook for 3 mins until it is vibrant green and tender-crisp. Transfer the baby broccoli to a plate.
  • Prepare the rice according to the package instructions. Portion it into bowls and top with the chicken mixture. Sprinkle with almonds and serve alongside baby broccoli for a delightful meal.
