Easy one-pot butter chicken recipe

One-pan authentic creamy butter chicken for easy weeknight dinners with minimal cleanup.
Ingredients:
  • 18.20 gm olive oil
  • 6 chicken thighs (bone in, skin on)
  • 1 onion, finely chopped
  • 2 garlic cloves, crushed
  • 20g ginger
  • 50g unsalted butter
  • 24.80 gm tandoori paste
  • 44.40 gm tomato paste
  • 500ml chicken stock
  • 400g can chopped tomatoes
  • 125ml coconut cream
  • 560g yoghurt
  • 125.00 ml dill fronds, roughly chopped
  • Juice of 1 lemon
  • 1 telegraph cucumber, sliced into rounds
  • 2 long green chillies, thinly sliced
  • Roti, to serve
  • Lime, to serve
  • Micro coriander, to serve
  • 2.50 gm ground cumin
  • 2.50 gm ground ginger
  • 2.50 gm ground smoked paprika
  • 1 tsp ground coriander seeds
  • 1 tsp ground turmeric
  • 2.50 gm ground cinnamon
  • 1 tsp ground dried mint
  • 1 tsp fenugreek seeds, toasted, ground
  • 1 tsp caraway seeds, toasted, ground
  • 1/4 tsp ground cloves
  • 1/4 tsp ground cardamom
Instructions:
  • In a large flameproof casserole over high heat, heat oil until shimmering. Season chicken, place skin-side down, and cook for 6 minutes until golden. Flip and cook for another 4 minutes until sealed. Remove chicken from pan and set aside.
  • Make the spice mix by mixing all the spices in a casserole dish. Add onion, garlic, ginger, and butter, then lower the heat. Cook and stir for 5 minutes until the onion softens. Stir in the tandoori and tomato pastes, cook for 1 more minute, and then add the stock and tomato.
  • Bring the pan back to high heat and let it come to a boil. Lower the heat to medium-low and simmer for 1 hour until the chicken is tender and the sauce is reduced by half. Season to taste and add the coconut cream.
  • Mix together creamy yoghurt, fragrant dill, and zesty lemon juice in a bowl. Season to perfection.
