Creamy chicken with fluffy three-ingredient dumplings, bursting with flavor and satisfaction. Don't overmix the batter for best results. A one-pot wonder that will leave you craving more.
Ingredients:
  • 18.20 gm olive oil
  • 700g chicken thigh fillets, trimmed, coarsely chopped
  • 1 brown onion, finely chopped
  • 1 carrot, peeled, finely chopped
  • 1 celery stick, finely chopped
  • 2 garlic cloves, crushed
  • 20.00 ml plain flour
  • 250ml (1 cup) Chicken Style Liquid Stock
  • 160ml (2/3 cup) thickened cream
  • Chopped fresh continental parsley leaves, to serve
  • 150g (1 cup) self-raising flour
  • Pinch of table salt
  • 60ml (1/4 cup) thickened cream
  • 60ml (1/4 cup) soda water
Instructions:
  • In a large, deep frying pan over medium-high heat, heat oil. Cook chicken in 2 batches for 3 minutes on each side until golden. Transfer to a plate and set aside.
  • Lower heat to medium. Sauté onion, carrot, and celery in the pan, stirring frequently, for 5 minutes, until softened. Stir in garlic and cook for 1 minute until fragrant. Sprinkle in flour and cook for 30 seconds. Slowly pour in stock while stirring constantly until smooth. Add chicken back to the pan in a single layer. Cover and bring to a simmer. Reduce heat to low and simmer for 10 minutes.
  • Prepare the dumplings: In a medium bowl, combine flour with a pinch of table salt. Create a well in the center and pour in the cream and soda water. Gently stir with a spatula until just combined; make sure not to overmix.
  • Combine the cream in the pan and stir until well mixed. Simmer the mixture. Drop heaped dessertspoonfuls (about 8) of the dumpling dough onto the chicken. Cook covered over low heat for 15 minutes until both the dumplings and chicken are cooked.
  • Garnish with fresh parsley before serving.
