One-pan caramelised tomato spaghetti recipe

Indulge in Puglia's unique Assassin's Spaghetti - crispy caramelized tomato pasta that's a culinary masterpiece. Rich tomato sauce with a touch of chili adds depth to this fiery dish. Don't stir too much and let the flavors meld like a risotto.
Ingredients:
  • 90g (1/3 cup) tomato paste
  • 18.20 gm olive oil
  • 500g btl Mum's Sause Tomato & Basil
  • 1/4 tsp dried chilli flakes
  • 250g spaghettini
  • Finely grated parmesan, to serve (optional)
Instructions:
  • In a large saucepan, combine tomato paste with 750ml (3 cups) of water. Season with salt and bring to a gentle boil over high heat. Once boiling, reduce the heat to very low to keep warm.
  • Heat the oil in a large frying pan over high heat, then add the sauce and chili flakes. Bring to a boil and cook for 3-4 minutes until the sauce thickens, stirring occasionally.
  • Gently arrange the pasta in the flavorful tomato sauce at the bottom of the pan without mixing. Spoon more sauce over the pasta to fully coat it. Allow it to cook undisturbed for 2-3 minutes until the pasta caramelizes underneath and develops a slight char.
  • Pour some of the flavorful tomato stock over the pasta and gently flip the noodles with tongs. Let it cook undisturbed until the liquid is absorbed and the pasta browns slightly. Continue this process, adding more stock gradually and letting the pasta caramelize between each addition, until it reaches the perfect al dente texture. This will take about 15-17 minutes in total.
