One-pan cheeseburger rice recipe

Introducing the ultimate comfort food: Cheeseburger rice with beef, bacon, mustard, and cheese - a guaranteed family favorite!
Ingredients:
  • 125g rindless middle bacon rashers, chopped
  • 600g Organic Beef Mince
  • 1 brown onion, finely chopped
  • 141.25 gm smoky barbecue sauce
  • 23.40 gm American mustard
  • 450g packet 21⁄2 minute white long-grain rice
  • 250.00 ml grated pizza cheese
  • 2 tomatoes, seeded, chopped
  • 62.50 ml bread & butter pickles
  • 1 green onion, thinly sliced
  • American mustard, to serve
  • Smoky barbecue sauce, to serve
Instructions:
  • In a large, deep frying pan, heat half of the oil over high heat. Add the bacon and cook for 2 to 3 minutes until browned, stirring occasionally. Transfer the crispy bacon to a bowl and set aside for later.
  • Heat the remaining oil in the same pan over high heat. Add the mince and cook, breaking it up with a wooden spoon, for 7 to 8 minutes until browned. Stir in the garlic and three-quarters of the brown onion, and cook for 4 to 5 minutes until softened. Pour in 1⁄2 cup of cold water, barbecue sauce, and mustard. Mix well before adding the rice. Stir constantly for 5 minutes until heated through. Gently fold in half of the bacon. Sprinkle cheese over the rice and cook covered for 2 minutes. Remove from heat and let it sit covered for 3 minutes to allow the cheese to melt.
  • Mix together the tomato, remaining bacon, and brown onion in a small bowl. Sprinkle the cheeseburger rice with a portion of the pickles, green onion, and tomato mixture. Drizzle with extra barbecue sauce and mustard. Serve with the rest of the pickles, green onion, and tomato mixture on the side.
