One-pan miso chicken drumsticks

Mouth-watering miso chicken bake with brown rice and veggies for the whole family to love.
Ingredients:
  • 1.2kg (about 9) chicken drumsticks, skin scored
  • 18.20 gm extra virgin olive oil
  • 150g (1/2 cup) white miso paste
  • 80ml (1/3 cup) mirin
  • 10.60 gm low-salt soy sauce
  • 30.00 ml finely grated fresh ginger
  • 200g (1 cup) brown basmati rice
  • 500ml (2 cups) chicken style liquid stock
  • Kale leaf and spinach mix, to serve
  • Sliced green shallot, to sprinkle
Instructions:
  • Preheat the oven to 220C/200C fan forced. Arrange drumsticks in a large baking dish in a single layer. Drizzle with oil, season, and bake for 20 minutes until golden brown.
  • In a small jug, blend together the miso, mirin, soy sauce, sugar, and ginger.
  • - Turn the drumsticks with tongs, then sprinkle the rice between them. - Pour the stock and 375ml (1 1/2 cups) water over the drumsticks. - Drizzle the miso mixture over the drumsticks. - Bake for 30-40 minutes until golden, cooked through, and liquid is absorbed. - Let it rest for 5 minutes, then sprinkle with kale mix and shallot before serving.
