Quick one-pan dinner: Sweet oven-roasted broccoli with moist, flavorful miso butter salmon. A new favorite in minutes!
Ingredients:
  • 4 tablespoons (1/2 stick) unsalted butter, at room temperature
  • 2 tablespoons red, white or yellow miso
  • 1 1/2 pounds whole broccoli heads or crowns, with stems
  • 2 tablespoons olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 4 (6 ounce) center-cut salmon fillets, 1 to 1 1/2 inches thick
  • 2 tablespoons chopped parsley, to garnish
  • 2 scallions, thinly sliced, to garnish
Instructions:
  • Preheat the oven to 450°F with the rack positioned in the center.
  • Prepare the miso butter by mixing the butter and miso in a small bowl until smooth.
  • Prepare the broccoli: Trim the tough end of the stalk, peel it, and cut into sticks. Divide the head into pieces.
  • Prepare the broccoli for roasting: Place the broccoli in the center of the baking sheet, drizzle with oil, sprinkle with salt and pepper, then gently massage the oil onto the broccoli. Ensure the broccoli is spread out evenly on the sheet. Roast in the oven for 15 minutes, flipping halfway through. Once done, lower the oven temperature to 425°F.
  • Prepare the baking sheet by making room for the salmon and placing the salmon skin side down. Lightly season with salt and pepper. Spread the miso butter over the fillets using a butter knife. Roast the salmon and broccoli together for an additional 10 minutes or until the salmon reaches an internal temperature of 135°F. Take out of the oven.
  • To finish, adjust oven rack to 3- to 4-inches below the broiler and preheat broiler. Spread softened miso butter over fillets if needed. Broil for 1 to 2 minutes until edges are charred. Let salmon rest for 5 minutes, then garnish with parsley and scallions. Serve with baked potatoes, if desired.
