Colorful veggies and citrus-glazed salmon on one sheet pan, ready in under 30 minutes - bursting with flavor!
Ingredients:
  • 3 bell peppers, assorted colors, cut into 1-inch chunks
  • 2 to 3 zucchini, sliced in half lengthwise and then cut into 1-inch chunks
  • 2 to 3 summer squash, cut into 1-inch chunks
  • 1 cup grape tomatoes, halved
  • 1 red onion, thinly sliced
  • 6 garlic cloves, chopped
  • 1/2 teaspoon salt
  • 1 teaspoon Catanzaro herbs
  • 2 tablespoons olive oil
Instructions:
  • Preheat the oven to a toasty 425 degrees F (220 degrees C).
  • Coat a resealable plastic bag with olive oil. Add bell peppers, zucchini, summer squash, tomatoes, red onion, chopped garlic, herbs, and salt. Shake well to ensure all vegetables are coated. Spread the vegetables evenly on a baking sheet and place the salmon on top, skin side down.
  • Combine orange juice, lemon juice, agave syrup, minced garlic, and chile flakes in a small bowl. Drizzle the glaze over the salmon ensuring it coats the fish well. The glaze will be light. Season with salt to taste.
  • Roast the fish in the preheated oven until it easily flakes with a fork, approximately 20 minutes.
