Try this flavorful one-pan slow-roasted chicken for a high-fiber, high-protein meal!
Ingredients:
  • 2kg RSPCA Approved Whole Chicken
  • 4 garlic cloves, bruised
  • 4 oregano sprigs
  • 1 lemon, cut into wedges
  • 2 tsp dried oregano
  • 5.00 gm ground paprika
  • 8.00 gm brown sugar
  • 18.20 gm olive oil
  • 250ml chicken stock
  • 300g green beans, trimmed
  • 250g cherry tomatoes
  • 80g olive
  • Oregano sprigs, extra, to serve
Instructions:
  • Preheat the oven to 150C. Dry the chicken cavity with paper towel, then stuff it with garlic, oregano, half of the lemon wedges, and a quarter of the onion. Secure the legs with kitchen string and place the chicken in a roasting pan.
  • Mix the dry oregano, paprika, sugar, and oil in a bowl. Season this flavorful mixture. Rub it all over the chicken and scatter the rest of the onion around it. Carefully pour the stock around the chicken. Roast in the oven for 2 1/4 hours.
  • Arrange the beans, tomatoes, and olives around the chicken and roast for an additional 15 minutes or until the juices run clear when tested in the thickest part of the thigh. Cover the chicken with foil and let it rest for 10 minutes.
  • Garnish with the additional lemon wedges and oregano sprigs before serving.
