Sriracha-glazed chicken thighs with veggies in a sweet and spicy one-pan dish.
Ingredients:
  • 4 skin-on chicken thighs
  • salt and ground black pepper to taste
  • 0.25 cup butter, divided
  • 0.5 red onion, sliced
  • 8 cloves garlic, minced
  • 4 baby red potatoes, quartered
  • 1 red bell pepper, diced
  • 0.33333334326744 cup sriracha sauce
  • 0.33333334326744 cup brown sugar
Instructions:
  • Preheat your oven to a piping hot 400 degrees F (200 degrees C).
  • Season chicken thighs generously with a sprinkle of salt and pepper for enhanced flavor.
  • In a large oven-proof skillet over medium-high heat, melt 3 tablespoons of butter until sizzling. Add chicken skin-side down and sear until beautifully browned, around 3 minutes. Flip and cook the other side for 3 to 4 minutes until perfectly golden. Transfer chicken to a plate and optionally discard any excess grease.
  • In a skillet, melt the remaining butter until sizzling. Sauté onion and garlic until fragrant. Add potatoes and red bell pepper, cook until tender. Top with chicken thighs.
  • Combine the spicy sriracha sauce with the sweet brown sugar in a bowl, then drizzle the mixture evenly over the chicken.
  • Roast in the oven until the chicken reaches 165 degrees F (74 degrees C and potatoes are golden brown, approximately 30 minutes.
