One-pot chili mac and cheese with savory ground beef, diced tomatoes, chili beans, and spices cooked to perfection in a rich tomato sauce.
Ingredients:
  • 1 tablespoon extra virgin olive oil
  • 1 medium sweet onion, diced small
  • 1 pound lean ground beef
  • 2 cups low-sodium chicken broth
  • 2 cups Ragu® Old World Style® Traditional Pasta Sauce
  • 1 (10 ounce) can diced tomatoes with green chile peppers
  • 1 (16 ounce) can mild chili beans, undrained
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1.5 cups uncooked elbow macaroni
  • 0.75 cup shredded Cheddar cheese
  • 0.25 cup chopped fresh parsley
Instructions:
  • In a large Dutch oven or pot over medium-high heat, heat olive oil. Add onion, garlic, and beef. Cook, stirring frequently, until the meat is browned and crumbly, about 3 minutes. Remove excess fat.
  • Combine chicken broth, Ragu® sauce, diced tomatoes with mild green chilies, beans, chili powder, and cumin in a pot. Season with salt and pepper. Bring to a boil, add pasta, cover, and simmer until pasta is al dente, approximately 14 minutes.
  • Take the pot off the heat, mix in the cheese and parsley, and serve right away. If desired, top with more cheese and parsley for an extra touch.
