Game day one-pot chili with ground chicken, beans, tomatoes, and spices for a delicious and easy meal.
Ingredients:
  • 1 small yellow onion, finely chopped
  • 1 tablespoon extra-virgin olive oil
  • 4 large cloves garlic, minced
  • 1 pound ground chicken
  • 1 (15 ounce) can diced tomatoes
  • 1 (15 ounce) can kidney beans, drained
  • 1 (15 ounce) can pinto beans, drained
  • 1 tablespoon chipotle chile powder
  • 2 teaspoons brown sugar
  • 1 teaspoon ground cayenne pepper
  • 0.5 teaspoon red pepper flakes
  • kosher salt to taste
  • 1 bunch fresh cilantro, stems removed and leaves chopped
Instructions:
  • In a large pot over medium-high heat, sauté the onion and garlic in oil until soft and fragrant, for about 5 minutes.
  • Turn up the heat to high and introduce the ground chicken into the pan. Sauté and constantly stir the chicken until it's fully cooked and no longer pink, approximately 5 to 10 minutes.
  • Combine tomatoes, kidney beans, pinto beans, chile powder, brown sugar, cayenne pepper, red pepper flakes, and salt in a pot. Heat until warmed through for about 5 minutes. Take off the heat and mix in fresh cilantro. Enjoy right away.
