Spicy chicken meatballs - quick, flavorful appetizer for any occasion, ready in under 30 minutes.
Ingredients:
  • Non-stick cooking spray
  • 1 large egg
  • 2 tablespoons milk
  • 5 tablespoons Buffalo sauce
  • 1/2 cup plain breadcrumbs
  • 1 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 pound ground chicken
  • 2 scallions
Instructions:
  • Heat the oven to 375°F. Prepare a baking sheet by lining it with parchment paper or greasing it with non-stick cooking spray.
  • Prepare the meatballs: In a large bowl, lightly beat together the egg, milk, and 1 tablespoon Buffalo sauce using a fork. Mix in the breadcrumbs, garlic powder, salt, and black pepper. Gently fold in the chicken using your hands, making sure not to over mix. The mixture should be soft and sticky.
  • Shape the meatballs: Use a rounded tablespoon of chicken to form a ball and place it on the baking sheet. Continue until all the chicken is used, resulting in approximately 20 meatballs. Wet your hands with water if they become sticky.
  • Achieve golden perfection: Bake the meatballs for approximately 14 minutes or until cooked through.
  • To serve the meatballs, move them to the center of the baking sheet and pour the remaining 1/4 cup of Buffalo sauce over them. Gently coat the meatballs in the sauce using a spoon. Plate the meatballs, garnish with scallions, and serve with toothpicks and extra sauce on the side. Leftovers can be refrigerated in a covered container for up to 3 days and reheated in the microwave. For freezing, cool the meatballs completely, then store in a sealed freezer-friendly container for up to 3 months. To reheat from frozen, bake covered with foil in a 350°F oven until warmed through.
