Buffalo chicken meatballs - a party favorite! Skewer with celery sticks, dip in ranch for a wings-like delight.
Ingredients:
  • 2.25 cups Buffalo wing sauce, divided
  • 0.5 cup butter
  • 0.25 cup honey
  • 0.66666668653488 cup bread crumbs
  • 0.33333334326744 cup finely chopped celery
  • 0.33333334326744 cup finely chopped green onions
  • 0.25 cup crumbled blue cheese
  • 2 large eggs
  • 2 pounds ground chicken
  • 0.75 teaspoon kosher salt
  • 0.5 teaspoon ground black pepper
Instructions:
  • Preheat the oven to a toasty 450 degrees F (230 degrees C). Cover a baking sheet with foil and give it a gentle spritz of cooking spray.
  • In a slow cooker, mix together 2 cups of Buffalo sauce, butter, and honey. Cover and set to High as you get the meatballs ready.
  • In a large bowl, mix together bread crumbs, celery, green onions, blue cheese, eggs, and remaining 1/4 cup Buffalo sauce until fully combined. Add chicken, salt, and pepper, and mix thoroughly. Shape the mixture into 1 1/2-inch meatballs using wet hands; you should end up with approximately 44 meatballs. Place the meatballs on the baking sheet.
  • Bake meatballs in the preheated oven for about 8 minutes until they're golden brown and just starting to hold together, ensuring they are not fully cooked yet.
  • Add the meatballs to the slow cooker and mix thoroughly with the sauce. Cook on Low until the meatballs reach an internal temperature of at least 160°F (71°C), approximately 1 to 2 hours. Keep warm until serving.
