Quick and easy buffalo chicken strips with dipping sauce, perfect for any meal.
Ingredients:
  • 1 (1.6 oz) package Buffalo wing seasoning mix (such as McCormick®)
  • 2 (16 ounce) packages boneless, skinless chicken tenders
  • 0.5 cup reduced-fat mayonnaise
  • 1 cup panko bread crumbs
  • 0.25 cup buttery spread (such as Smart Balance®)
  • 0.5 cup blue cheese salad dressing, or to taste
Instructions:
  • Preheat the oven to a toasty 375 degrees F (190 degrees C) and prepare a baking sheet by lining it with foil.
  • Place the seasoning mix in a resealable plastic bag, then add the chicken pieces. Seal the bag and shake it gently to ensure the chicken is evenly coated with the seasoning.
  • Coat 1 to 2 pieces of chicken at a time with mayonnaise, then roll in bread crumbs. Arrange on baking sheet and top each strip with 2 to 3 pats of buttery spread before baking.
  • Roast in the preheated oven until the chicken is cooked through and the juices run clear, for approximately 15 minutes.
  • Serve with a side of dressing.
