Creamy one-pot chicken and mushroom carbonara - a budget-friendly family favorite!
Ingredients:
  • 4.60 gm extra virgin olive oil
  • 300g chicken breast
  • 1 brown onion, finely chopped
  • 2 lean shortcut bacon rashers, chopped
  • 200g button mushrooms, thickly sliced
  • 2 garlic cloves, crushed
  • 255.00 gm Salt Reduced Chicken Style Liquid Stock
  • 300g dried fettuccine pasta
  • 82.50 ml light cream for cooking
  • 1 egg
  • 62.50 ml chopped fresh flat-leaf parsley leaves
  • 40.00 ml finely grated parmesan
Instructions:
  • In a large, deep frying pan over medium-high heat, heat the oil. Cook the chicken for 4 minutes on each side or until fully cooked. Transfer to a plate and cover to keep warm.
  • Place onions and bacon in the pan. Sauté until golden and aromatic for about 5 minutes. Introduce mushrooms and cook until tender for about 3 minutes. Add garlic and cook until fragrant, about 30 seconds. Pour in stock and 2 1⁄2 cups of water, cover, and bring to a boil. Drop in the fettuccine, reduce heat to medium, and simmer uncovered, stirring occasionally, for 12-15 minutes until pasta is tender and the sauce has thickened. Remove from heat and serve.
  • Slice the chicken and combine the cream and egg in a bowl. Add the cream mixture and 3/4 of the parsley to a pan. Season with salt and pepper. Cook over low heat for 1 minute, stirring until well combined. Add the chicken on top, sprinkle with parmesan and the remaining parsley. Serve.
