One-pot creamy lemon pork sausage pasta: Family favorite, cozy winter meal.
Ingredients:
  • 500g Italian pork sausages
  • 2 leeks, white part only, thinly sliced
  • 2 garlic cloves, crushed
  • 1 litre salt-reduced chicken stock
  • 300ml Cooking Cream
  • 300g penne pasta
  • 1 bunch broccolini, trimmed, cut into 4cm lengths
  • 42.00 gm lemon juice
  • 62.50 ml grated extra sharp parmesan, plus extra to serve
  • Lemon zest, to serve
  • Fresh basil leaves, to serve
Instructions:
  • Remove sausages from casings and crumble the meat. Heat oil in a large heavy-based saucepan over medium-high heat. Add the sausage and cook for 5 minutes or until browned. Stir in the leek and cook for 3 minutes until softened. Add the garlic and cook for 30 seconds until fragrant.
  • Stir in half of the cream and the stock and bring it to a boil. Then add the pasta. Lower the heat to medium-low and simmer partially covered for 15 minutes until the pasta is almost tender. Add the broccolini and cook for an additional 4 minutes until both pasta and broccolini are tender. Finally, stir in the remaining cream, lemon juice, and parmesan until the parmesan melts.
  • Garnish pasta with additional parmesan, lemon zest, and basil before serving.
