One-pot gnocchi Sorrentina

One-pot meal for easy cleanup, so you can savor every bite with no hassle.
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 1 brown onion, finely chopped
  • 1 carrot, finely diced
  • 1 celery stalk, finely diced
  • 2 garlic cloves, crushed
  • 700g bottle passata cooking sauce
  • 255.00 gm Vegetable Liquid Stock
  • 500g packet gnocchi
  • 82.50 ml chopped fresh basil leaves
  • 250.00 ml grated mozzarella
  • 40.00 ml finely grated parmesan
  • Extra fresh basil leaves, to serve
Instructions:
  • Preheat oven to a toasty 220C/200C fan-forced.
  • In a large shallow flameproof casserole dish, heat oil over medium-high heat. Add onion, carrot, celery, and garlic. Cook, stirring for 5 minutes until softened. Stir in passata and stock. Season with salt and pepper. Bring to a boil, then simmer on low for 10 minutes until slightly thickened, stirring occasionally.
  • Add the gnocchi and basil to the mixture. Top with mozzarella and parmesan. Place in the oven and bake for 15 minutes until the gnocchi is tender and the cheese is golden and melted. Allow it to rest for 5 minutes. Serve with a sprinkle of extra basil on top.
