One-pot vegetarian gnocchi with pumpkin

Try this irresistible one-pot gnocchi and pumpkin dish, paired with baby spinach, feta, and fresh herbs for a winning family favorite!
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 1 red onion, chopped
  • 3 garlic cloves, crushed
  • 2 tsp chopped fresh thyme, plus extra to garnish
  • 800g pumpkin, cut into 3cm chunks
  • 40.00 ml vegetable stock powder
  • 2 x 400g cans baby roma tomatoes
  • 500g packet shelf-stable gnocchi
  • 60g baby spinach
  • 60g fetta, crumbled
Instructions:
  • In a large saucepan over medium heat, heat oil. Add onion and cook, stirring occasionally, for 5 minutes until just softened. Then add garlic and thyme, stirring constantly for 30 seconds until fragrant.
  • Combine the pumpkin and stir well. Pour in stock powder, 1 1/2 cups of water, and canned tomatoes. Bring the mixture to a simmer, then cover and let it simmer for 5 minutes. Add the gnocchi and mix gently. Continue cooking uncovered for about 5 minutes until the gnocchi is tender.
  • Garnish with fresh spinach, crumbled feta, and a sprinkle of extra thyme before serving.
