One-pot honey barbecue beef brisket recipe

Tender beef brisket cooked in sweet honey and savory barbecue sauce in one pot. Enjoy with steamed veggies. Leftovers can be used for brisket subs, sliders, or sandwiches. Perfect dish for the whole family.
Ingredients:
  • 18.40 gm vegetable oil
  • 1.5kg piece beef brisket
  • 678.30 gm beef stock
  • 59.40 gm dark brown sugar
  • 410g can tomato puree
  • 24.40 gm Worcestershire sauce
  • 23.40 gm wholegrain mustard
  • 57.20 gm honey
  • 53.20 gm treacle
  • 3 tsp onion powder
  • 2 tsp dried thyme
  • 3 garlic cloves, crushed
  • 600g baby potatoes
  • 1 bunch dutch baby carrots, trimmed, scrubbed
  • 100g green beans, trimmed
  • Fresh thyme sprigs, to garnish
Instructions:
  • Preheat your oven to a toasty 180°C/160°C fan-forced.
  • Heat oil in a large, heavy-based casserole dish over medium-high heat. Season beef with salt and pepper, then sear for 5 minutes on each side until browned.
  • In a large jug, mix together stock, sugar, tomato puree, sauce, mustard, honey, treacle, onion powder, dried thyme, and garlic. Pour this flavorful mixture into a pan, cover it, and bring it to a simmer. Transfer the pan to the oven and bake for 3 hours, remember to turn the beef halfway through cooking for perfect results.
  • Flip the beef over. Place potatoes and carrots around the beef in the baking dish. Bake covered for an additional hour, or until the beef and vegetables are tender.
  • Add beans to the dish and simmer for 10 minutes or until beans are tender. Sprinkle with fresh thyme sprigs before serving.
