Honey-Mustard Chicken and Carrots

Wholesome one-pot chicken with honey, mustard, and peanuts - ready in just 30 minutes!
Ingredients:
  • 2 teaspoons canola or soybean oil
  • 4 boneless skinless chicken breast halves
  • 1/2 cup apple juice
  • 2 cups frozen baby-cut carrots
  • 2 tablespoons sweet honey mustard
  • 3 tablespoons coarsely chopped honey-roasted peanuts
Instructions:
  • In a 10-inch nonstick skillet over medium-high heat, brown chicken in oil for 5 to 8 minutes until golden on both sides.
  • Pour in the fragrant apple juice and lower the heat to medium. Cover the pot and allow it to simmer for 5 minutes. Toss in the vibrant carrots, cover again, and continue cooking for 5 to 10 minutes until the chicken is cooked through and the carrots are tender yet still slightly crisp.
  • Using a slotted spoon, transfer the chicken and carrots from the skillet to a plate and cover to keep warm. Stir mustard into the remaining liquid in the skillet. Pour the flavorful mustard sauce over the chicken and carrots, then top with a sprinkle of peanuts.
