Ingredients:
  • 500g trimmed lamb fillets
  • 5.00 gm good-quality medium curry powder
  • 1 large onion, thinly sliced
  • 40ml (2 tbsp) olive oil
  • 500ml (2 cups) chicken style liquid stock
  • 425g can crushed tomatoes
  • 2 cinnamon sticks
  • 4 garlic cloves, crushed
  • 6-8 fresh curry leaves*
  • 375.00 ml orzo pasta or risoni pasta
  • Thick Greek yoghurt, to serve
  • Naan bread, to serve
Instructions:
  • Preheat your oven to 180°C. Cut lamb fillets into bite-sized 2cm pieces and arrange them in a baking dish. Sprinkle with curry powder and onion, then generously drizzle with oil. Mix everything well and bake for 20 minutes until perfectly cooked.
  • Take the lamb out of the oven and mix in stock, tomatoes, cinnamon, garlic, and curry leaves. Season with salt and pepper. Cover with foil and bake for 25 minutes.
  • Take out of the oven, mix in the orzo, and return to the oven for an additional 20 minutes until most of the liquid is absorbed. Stir one last time before serving with naan and a dollop of yogurt.
