Whip up a quick and easy one-pot fettuccine pasta dinner. Substitute pasta as needed and adjust cooking time. Top with tarragon, thyme, or chives. Serve with BBQ chicken for a delicious meal in no time!
Ingredients:
  • 36.40 gm olive oil
  • 3 garlic cloves, crushed
  • 750ml (3 cups) Chicken Style Stock
  • 375g dried fettuccine
  • 125ml (1/2 cup) pure cream
  • 2 tsp finely grated lemon rind
  • 200g (2 cups) shredded cooked chicken
  • Tarragon leave, to serve
  • Finely grated parmesan, to serve
Instructions:
  • In a large saucepan over medium heat, heat oil. Add garlic and cook, stirring, for 30 seconds until fragrant. Stir in stock and 1 cup water, then add pasta. Cover and bring to a boil, then uncover and cook for about 4 minutes until pasta is just al dente, using tongs to move pasta occasionally.
  • Incorporate the cream and rind with finesse using tongs. Introduce the chicken and simmer for 1-2 minutes until warmed.
  • Serve the dish in individual bowls, garnish with fresh tarragon and grated Parmesan, add a sprinkle of freshly ground black pepper on top, and enjoy right away.
