Create a flavorful Mexican rice dish for a speedy weeknight meal the whole family will love.
Ingredients:
  • 36.40 gm extra virgin olive oil
  • 200g small swiss brown mushrooms, halved
  • 1 red onion, cut into wedges
  • 1 red capsicum, cut into strips
  • 1 yellow capsicum, cut into strips
  • 355g packet Chilli and Garlic Mexican Rice Kit
  • 425g can Black Beans, drained, rinsed
  • 125.00 ml grated tasty cheese
  • 1 avocado, sliced
  • 82.50 ml fresh coriander sprigs
  • 50g fetta, crumbled
  • Lime cheeks, to serve
Instructions:
  • In a large, deep frying pan over medium-high heat, heat oil until shimmering. Add mushrooms, onions, and capsicum. Cook for 5 minutes, stirring occasionally, until lightly browned. Transfer half of the mixture to a bowl and cover to keep warm.
  • Combine the rice and spice mixes from the kit with the mushroom mixture in the pan. Stir together. Pour in the sauce from the kit along with 1 1/2 cups of water. Bring to a simmer, then reduce heat to medium-low. Cook for 10 minutes until liquid is absorbed, stirring occasionally. Mix in the beans, sprinkle with tasty cheese, cover, and cook for 3 to 4 minutes until cheese melts.
  • Sprinkle reserved mushroom mixture over the rice, then add avocado, fresh coriander, and crumbled fetta on top. Serve with lime cheeks on the side.
