Delicious open faced egg salad sandwiches made with Bisquick® mix - perfect for breakfast or lunch.
Ingredients:
  • 1 cup Original Bisquick™ mix
  • 1/2 cup milk
  • 1 egg, slightly beaten
  • 1 tablespoon ground mustard
  • 1/2 teaspoon celery seed
  • 8 hard-cooked eggs, peeled, chopped
  • 1/4 cup mayonnaise
  • 2 tablespoons finely chopped onion
  • 2 tablespoons finely chopped celery
  • 2 tablespoons finely chopped red bell pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup shredded lettuce
Instructions:
  • - Preheat your oven to 350°F and generously spray an 8-inch square pan with cooking spray. - In a large bowl, combine all the bread ingredients until well mixed. Pour the mixture into the prepared pan. - Bake in the preheated oven for 15 to 17 minutes, or until a toothpick inserted in the center comes out clean (the top of the bread will remain light in color). - Allow the bread to cool before serving.
  • In a medium bowl, mix together all egg salad ingredients excluding the lettuce.
  • Cut the bread into 4 squares, then generously top each with 1/2 cup delicious egg salad, and 1/4 cup fresh lettuce. Optionally, season with more salt and pepper to your liking. Enjoy!
