Basil, tomato, and mozzarella melted on Italian bread - a deliciously quick and elegant cheese sandwich. Pair with wine or soup for a perfect light summer lunch.
Ingredients:
  • 4 slices Italian bread
  • 4 slices ripe tomato
  • 4 leaves fresh basil
  • 4 slices fresh mozzarella cheese
  • 2 tablespoons extra virgin olive oil, divided
  • 2 tablespoons balsamic vinegar, divided
Instructions:
  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. Place 4 slices of Italian bread on the sheet and top each one with a tomato slice, a basil leaf, and a slice of mozzarella cheese.
  • Bake until the cheese is melted, approximately 7 minutes. Drizzle each sandwich with 1/2 tablespoon olive oil and balsamic vinegar.
