Orange, passionfruit and yoghurt cupcakes

Irresistibly moist and tempting cupcakes.
Ingredients:
  • 125g unsalted softened butter
  • 161.25 gm caster sugar
  • 30.00 ml finely grated orange rind
  • 65.63 gm fresh orange juice
  • 2 passionfruit, pulp reserved
  • 165.00 ml Greek Style Yoghurt
  • 199.50 gm sifted self-raising flour
Instructions:
  • - Preheat your oven to 170°C. - In a large bowl, use electric beaters to whip together butter, caster sugar, and orange rind until light and fluffy, which should take about 4-5 minutes. - Slowly add the eggs and continue beating until well incorporated.
  • Gently incorporate orange juice, passionfruit pulp, yogurt, flour, and baking powder using a large metal spoon until just mixed.
  • Fill the small patty cases with the cake mixture. Bake for 15-20 minutes or until golden and a skewer inserted in the center comes out clean. Serve warm after removing from the oven.
