Elevate your baking skills with delectable orange tarts.
Ingredients:
  • 3 sheets frozen butter puff pastry
  • 4 eggs
  • 2 egg yolks
  • 165g caster sugar
  • 175ml orange juice
  • 21.00 gm lemon juice
  • Grated rind of 1 orange
  • 300ml thickened cream
  • 1 tsp ground cardamom
Instructions:
  • Preheat the oven to 200°C and generously grease a 12-hole muffin pan (1/2 cup/125ml each).
  • Take each pastry sheet and divide it into quarters, resulting in 12 squares. Place a square into each muffin pan, trimming any extra pastry. Chill in the refrigerator for 15 minutes.
  • Line each muffin pan mould with nonstick baking paper and fill with baking weights, rice, or pulses. Bake for 25 minutes, then remove weights and bake for an additional 5 minutes until crisp. Cool before using.
  • Lower the oven heat to 150°C.
  • Combine eggs, egg yolks, and caster sugar in a heatproof bowl. Mix in orange and lemon juices, orange rind, cream, and ground cardamom until well blended.
  • Create a double boiler by positioning a bowl over gently simmering water, ensuring it does not make contact with the water. Continuously stir for approximately 5 minutes until the mixture thickens. Fill tart shells with the mixture, then bake until the tarts are just set, about 15-20 minutes.
  • Let it cool to room temperature.
  • Sprinkle tarts with extra sugar to caramelise the tops. Preheat the grill to high and place tarts under it until the sugar melts and caramelises slightly. Serve.
