Ingredients:
  • 2 oranges
  • 2 medium or 1 large grapefruit
  • 60ml (1/4 cup) honey
  • 300g fresh reduced-fat ricotta
  • 41.20 gm reduced-fat milk
  • 57.20 gm honey
  • 1 tsp finely grated orange rind
  • 1 tsp finely grated lemon rind
Instructions:
  • Combine ricotta, milk, honey, orange rind, and lemon rind in a medium bowl. Whip with electric beaters until creamy. Chill covered in the fridge.
  • Peel the oranges and grapefruit with a small sharp knife, making sure to remove the white pith. Slice out the segments by cutting alongside the white membranes. Transfer the segments to a bowl.
  • Pour the honey into a small cup and place it in a heatproof bowl with boiling water. Stir until the honey becomes runny.
  • Drizzle the fragrant honey over the fruit, mixing gently. Serve in dishes and dollop with the citrus-infused ricotta cream.
