Orange and pistachio self-saucing pudding

Quick and easy magic pudding made effortlessly in the microwave.
Ingredients:
  • 60g butter, chopped
  • 128.75 gm milk
  • 150.00 gm self-raising flour
  • 1.00 gm baking powder
  • 107.50 gm caster sugar
  • 75.00 gm fine polenta
  • 62.50 ml pistachio kernels, roughly chopped
  • 2 tsp orange rind, finely grated
  • 131.26 gm orange juice
  • Orange zest (see Notes), to serve
  • Extra chopped pistachio kernels, to serve
  • Icing sugar mixture, to serve
  • Thickened cream, to serve
  • 5.00 gm cornflour
  • 53.75 gm caster sugar
  • 312.50 gm boiling water
Instructions:
  • In a microwave-safe jug, combine butter and milk. Microwave on HIGH for 1 minute and 20 seconds, stirring halfway through, until the butter has melted.
  • In a bowl, sift flour and baking powder. Add sugar, polenta, pistachio kernels, and orange rind. Mix well. Pour in the milk mixture and orange juice. Stir until combined. Transfer the mixture into a microwave-safe dish, smooth the top with a spatula.
  • Prepare the sauce by combining cornflour and sugar in a heatproof jug. Slowly pour in boiling water and orange juice while stirring consistently until the mixture is smooth and well combined.
  • Drizzle sauce over the back of a large metal spoon to evenly coat the pudding batter. Place dish on an upturned microwave-safe plate. Microwave on MEDIUM (50%) for 12 to 14 minutes or until a skewer inserted into the edge of the pudding comes out clean. Let it stand for 1 minute, then finish with orange zest, chopped pistachios, a sprinkle of icing sugar, and a dollop of cream. Serve promptly.
