Impress the kids on their first day with tasty orange sultana cakes.
Ingredients:
  • 125g butter, softened
  • 135.00 gm brown sugar
  • 1 tsp finely grated orange rind
  • 2 eggs
  • 225.00 gm wholemeal self-raising flour
  • 196.88 gm orange juice
  • 85.00 gm sultanas
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced and line two mini muffin pans with paper cases. Each pan should have 24 holes, with each hole holding 1 1/2 tablespoons.
  • With an electric mixer, whip together butter, sugar, and orange rind until beautifully light and fluffy. Add eggs one at a time, mixing until just combined. Incorporate flour, orange juice, and sultanas. Spoon the mixture into the prepared pan holes.
  • Bake for 22 to 24 minutes, or until a skewer inserted in the center comes out clean. Allow the bread to cool in the pan for 5 minutes, then transfer it to a wire rack to cool completely.
