Louise Keats' nutritious pudding features quinoa, prunes, and almond meal for added health benefits in a delicious dessert.
Ingredients:
  • 150g sultanas
  • 150g currants
  • 150g pitted prunes, finely chopped
  • 150g dried dates, finely chopped
  • 2 oranges, rind grated, juiced
  • 20.00 ml brandy (optional)
  • 155g (1 1/2 cups) almond meal
  • 140g (3/4 cup) white quinoa, cooked
  • 2.50 gm ground cinnamon
  • 2.50 gm mixed spice
  • 60ml (1⁄4 cup) extra virgin olive oil
  • 3 eggs
  • Icing sugar, to dust (optional)
  • 2 eggs
  • 1 egg yolk
  • 40.50 gm maple syrup
  • 10.00 gm gluten-free cornflour
  • 500ml (2 cups) milk
  • 4.40 gm natural vanilla extract
Instructions:
  • Combine the sultanas, currants, prunes, dates, citrus rind, juice, and brandy in a glass bowl. Cover and let sit overnight.
  • Lightly coat a 1.25L (5 cup) pudding basin with oil and line the base and side with baking paper. Mix almond meal, quinoa, cinnamon, and spice into the fruit mixture, stirring to combine. In a separate jug, whisk together the oil and eggs, then pour over the fruit mixture and mix well. Spoon the mixture into the prepared basin, smooth the surface, and secure with a lid or a layer of baking paper and foil pleated down the center, fastening with string.
  • Place a basin in a saucepan on an upturned heatproof saucer. Fill the saucepan with boiling water halfway up the side of the basin. Cover and cook over medium heat for 3 hours, adding more boiling water as needed to ensure the water level is maintained. Remove the basin from the pan, let it stand for 10 minutes, then unmold onto a serving plate.
  • In a bowl, whisk together eggs, yolk, maple syrup, and cornflour. Simmer milk and vanilla in a saucepan. Slowly pour the milk mixture into the egg mixture, whisking until combined. Cook the mixture on low heat for 3 minutes until thickened. Strain to eliminate lumps and remove from heat.
  • Enjoy Christmas pudding topped with a generous drizzle of velvety custard.
