Orange Creamsicle cupcakes with sweet summer frosting and glaze.
Ingredients:
  • 1.5 cups all-purpose flour
  • 1.25 teaspoons baking powder
  • 0.5 cup unsalted butter, softened
  • 0.66666668653488 cup milk
  • 2 teaspoons vanilla extract
  • 2 teaspoons orange extract
  • 3 cups powdered sugar
  • 3 tablespoons heavy cream
  • 1 teaspoon orange extract
  • 1 orange, peeled and sliced
  • 0.5 cup orange juice
  • 2 teaspoons cornstarch
  • 2 tablespoons powdered sugar
Instructions:
  • Preheat the oven to 350°F (175°C) and prepare a 12-cup muffin pan with paper liners or grease with butter.
  • Combine flour, baking powder, and salt in a medium bowl and whisk until well mixed.
  • In a separate bowl, cream together sugar and butter until fluffy. Beat in eggs one at a time, then gradually mix in milk, vanilla extract, and orange extract.
  • Evenly distribute the batter into the prepared tin.
  • Bake in the preheated oven for 20 to 25 minutes or until a toothpick inserted in the center comes out clean. Allow the cupcakes to cool completely before serving.
  • Cream butter for frosting using a mixer on high speed; blend in powdered sugar. Gradually incorporate heavy cream one tablespoon at a time. Stir in orange extract and vanilla extract until mixture is smooth. Frost chilled cupcakes.
  • In a saucepan, whisk together orange, orange juice, cornstarch, and powdered sugar for the glaze until smooth. Bring to a boil, then simmer on low heat for 5 minutes, stirring frequently. Strain the glaze to remove the orange bits and transfer to a container. Drizzle the glaze over the frosted cupcakes.
