Citrus-inspired twist on classic Watergate salad with pineapple, orange extract, marshmallows, and pecans. Ideal for parties and potlucks.
Ingredients:
  • 1 (20 ounce) can crushed pineapple, undrained
  • 1 (3.4 ounce) package instant vanilla pudding mix
  • 0.5 teaspoon orange extract, or more to taste
  • 2 drops red food coloring
  • 1 (8 ounce) tub frozen whipped topping (such as Cool Whip®), thawed
  • 1 cup miniature marshmallows (such as Kraft® Jet-Puffed)
  • 0.5 cup chopped pecans, divided
Instructions:
  • Combine pineapple, pudding mix, and orange extract in a bowl, then mix in food coloring. Gently fold in whipped topping and mini marshmallows, keeping a small portion of chopped pecans aside for topping before stirring in the rest.
  • Sprinkle on the remaining chopped pecans and refrigerate for a minimum of 1 hour to chill.
