Elevate classic ice cream truck nostalgia with a stunning potluck dessert. Sugar cookie crust, vanilla pudding, orange Jell-O®, and Cool Whip layers topped with mandarin oranges - a showstopper in a glass dish. Guaranteed potluck favorite with beautiful layers on display.
Ingredients:
  • 1 pouch (17.5 oz) Betty Crocker™ Sugar Cookie Mix
  • Butter and egg called for on cookie mix pouch for drop cookies
  • 1/3 cup butter, melted
  • 2 boxes (3 oz each) Jell-O® orange-flavored gelatin
  • 1/3 cup boiling water
  • 2 boxes (3.4 oz each) Jell-O® vanilla-flavor instant pudding & pie filling mix
  • 2 1/2 cups cold milk
  • 1 package (8 oz) cream cheese, softened
  • 1 cup powdered sugar
  • 1 container (12 oz) Cool Whip frozen whipped topping, thawed
  • 1/2 cup canned mandarin orange segments, drained
Instructions:
  • Preheat your oven to 375°F. Follow the instructions on the pouch to make and bake delicious drop cookies. Allow the cookies to cool completely for about 30 minutes.
  • Use a food processor to crush half of the cookies into coarse crumbs. Transfer to a medium bowl. Crush the rest of the cookies and add to the bowl. Mix in melted butter until combined. Press the cookie crumb mixture firmly into the bottom of an ungreased 13x9-inch (3-quart) glass baking dish and set aside.
  • Place gelatin in a small bowl, pour boiling water over it, and whisk until blended. Stir occasionally for about 2 minutes until mostly dissolved. In a medium bowl, whisk dry pudding mixes and milk for about 2 minutes until thick. Add the dissolved gelatin and stir well. Let sit for 5 minutes, stirring occasionally.
  • In a large bowl, use an electric mixer on medium speed to cream together cream cheese and powdered sugar until smooth, scraping down the sides of the bowl as needed. Mix in 2 cups of whipped topping. Spread the mixture over the cookie crust.
  • Spread the pudding mixture over the cream cheese layer, ensuring it covers the top evenly. Spoon the remaining whipped topping over the pudding layer and spread it carefully to create an even layer. Refrigerate for 5 hours.
  • Top with freshly cut orange segments before serving. Cut into individual squares and refrigerate any leftovers.
